Found hubbie's favourite recipe for crumble!! Very sweet and rather fattening however it has fruit so surely that balances it out :) Can replace with most fruits.
Oven to 190 celsius
Rub 110 grams butter into 1 cup of flour, 1/2 cup bran and 3/4 cup brown sugar until it looks like bread crumbs. Sprinkle over 6 large cooked apples, cored and peeled, cooked in water and white sugar. Granny Smiths are the nicest.
Bake in the oven for 20 minutes. Serve with ice cream or custard!

Stir 2 Tbspns dried yeast, 1/2 cup sugar and 1.5 cups lukewarm milk in a bowl. Put aside till frothy (about 15 mins). Sift in 4.5 cups plain four and 1 tspn salt. Make a well and ad 50 grams melted butter, 1 beaten egg, 1 tspn cinnamon and 1 cup choc chips. Knead for 5 mins. Place in a greased bowl with gladwrap over for about 1-1/2 hours or until twice the size. Punch dough, add 1.5 cups more choc chips. Knead, divide into 16 ball shapes. Place close together on baking paper. Cook at 200 degrees celcius for 20-30 minutes.
When cooked brush glaze straight on top.
Glaze: 1/4 cup sugar, 1/4 cup hot water and 1 tspn gelatine into pot until all dissolved.
When cool add melted white chocolate crosses or make vanilla/white/chocolate iced crosses.

I loved this but the kids would prefer it if I exchanged the eggplant for cooked chicken. Prep takes a little while but definately worth it!!!
1 eggplant sliced
3 Tbspns olive oil
2 crushed garlic cloves (I added 2 more)
1 sliced red onion
1 diced green, red and yellow capsicum
2 sliced celery sticks
1 diced courgette
1/2 tspn chilli powder
1/2 tspn ground cumin
225g sliced mushrooms
1 1/4 cups pureed tomatoes
2 Tbspns chopped fresh basil
Precooked lasagne sheets
Slice eggplant and sprinkle with salt, leave 20 mins and wash off and drain. Heat oil, saute garlic and onion until transparent. Add capsicums,mushrooms, celery and courgettes. Cook 3-4 mins. add spices.
Seperate container: Mix tomatoes, basil and seasoning.
Cheese sauce:
2 Tbspns butter
1 Tbspn flour
150mls vege stock
300mls milk
1tspn dijon mustard
1 Tbspn chopped basil
3/4 cup grated cheese
1 beaten egg
Add all but egg as normal cheese sauce making. At the end add egg.
Layer: lasagne sheets, veges, tomato sauce mix, eggplant. Repeat. Sprinkle graed cheese on top. Bake 180 c for 40 mins.

450 g mince
100g butter or oil
225g diced bacon
1 Tbspn sugar
1 Dspn curry powder
2 roughly sliced onions
2 packets chicken noodle soup
600ml water
1 Dspn soya sauce
1/2 roughly cut cabbage
Brown mince and onions in butter/oil. Add everything else except cabbage. Simmer 20 mins. Add cabbage until it turns bright green. Serve with noodles, rice or veges. YUM!!!

Lemonade!!!!!!
Put 1 cup of water and 1 cup of sugar in a pot. Dissolve sugar slowly over a low heat, stirring occasionally. Once dissolved boil covered for 5 minutes. Add this to a mix of 3/4 cup of lemon juice (preferably spray free/organic) with 4 cups of water.This tastes lovely warm or cold.
The lemon can also be substituted for grapefruit!

4 eggs
3/4 cup sugar
2 tsp vanilla essence
1/4 cup liquer (25-30% alcohol)
500 ml cream
Beat egg yolks, sugar, vanilla and liquer with a beater until thick and pale. In a seperate bowl whisk the egg whites until frothy peaks form. Beat the cream in a third bowl.
Fold cream mixture into yolk mixture, then egg white mixture. Pour into plastic container and freeze overnight.
I used midori for my liquer but next time it will have to be Baileys with chocolate chunks and a few good nouts!

2 cups coconut
1 cup self raising flour
1 cup sugar
100 grams butter
1 egg.
Cream butter and sugar. Add rest of ingredients. Put tspn lots onto gresed tray and flatten. Bake at 175 degrees until brown (about 12 minutes).
